Hawaiian Haystacks

Do you want to know one of the best parts about having my family in town this week? Sunday dinner. I love when we all get together and have the chance to sit, chat, eat, and laugh. My family is so much fun. I just can’t get enough of them. Today’s afternoon did not disappoint. haystacks

Feeding a healthy meal to a crowd can be somewhat difficult, but this recipe is a GREAT solution. We had what our family calls, Hawaiian Haystacks. They are simple to make, everyone can assemble them however they may like, and they are healthy!

Hawaiian Haystacks

In a crock pot combine, and cook on high for 3-4 hours or until chicken shreds easily:

  • 2 cans of Cambells healthy choice, low sodium cream of chicken soup
  • 1 can of chicken broth
  • 4-6 chicken breasts

We serve our chicken over quinoa or rice. (We have both to please the crowd.) Toppings for your haystacks can be just about whatever you’d like. We had sunflower seeds, sliced green onions, carrots, red bell peppers, green bell peppers, pineapple, mandarin oranges, tomatoes, & olives. I don’t know if I’ve ever had a Sunday dinner with my family that didn’t have a fruit platter. So delicious.

    Ha! I had dinner at my aunt Marsha’s last night and we had…Hawaiin Haystacks! Too funny. Speaking of, I asked her about your mom. She totally knew who she was and said she was pretty much the bees knees. She said your mom knew my Grandma too 🙂

    I usually make my topping the same way as yours, but I have never made it over quinoa. Genius. And fruit platters are the best. Yum!

      My mom just said she saw Marsha!! I love it. 🙂 And I love that we were simultaneously eating Hawaiian Haystacks. What are we not doing the same? Sheesh. I love it with the quinoa, it is super tasty. This week is CRAZY cause my family is here, but can we do lunch or yogland next week??
