A Munch and Crunch Fantastic Lunch

After having an aversion to my kitchen last night I felt I owed it to my freshly purchased produce to make a fantastic lunch… And a fantastic lunch it was.

 A salad of fresh spinach, chopped avocado, a Morningstar veggie burger, and a drizzle of fat free chipotle ranch.
A heap of mango salsa and some oven baked tortilla chips.

All accompanied by a bowl of fresh berries.

So fresh and tasty. 
I used to be afraid of veggie burgers, but I LOVE them now. I have learned that there are some kinds out there that aren’t created equal. In fact, I’ve tried some that tasted like garbage. The Morningstar veggie burgers and black bean burgers are my favorite. Great texture, great taste.
I also did not used to like fresh blueberries. I only liked the freeze dried ones when they were baked into a muffin mix. I’m so glad I’ve grown up. 🙂
Workout for the day:
60 mins intervals on the elliptical 
40 minutes weights

3 sets of each 
12 underhand rear rows with the 40 lb bar
alt with
12 squats to curls with 40 lb bar
12 chest press with 25 lb dumbbells & feet in the air to engage core
alt with 
12 rear triceps extensions with 10 lb db
12 single leg squat on right leg with left arm upright row w/15 lb db
alt with
12 single leg squat on left leg with left arm upright row w/15 lb db
alt with
I’ll be honest. I was extremely tired today, and it was one of those…”just stay 5 more minutes and see how you do” days. I made it through my workout but it was nothing to write home about. Some days you got it, some days you don’t. Like I always say, “better something than nothing, right?” Right.

    I have never tried a veggie burger before but your lunch looks delish and I really need to find that fat free chipotle…sounds yummy! Something I recently “discovered” is roasted red pepper hummus. I mean really I have had it before but I rediscovered it and it has been amazing!

    Great job at pushing through the workout even though you weren’t feeling it. That is awesome!

    I love veggie burgers; especially the morningstar black bean one! yum!
    Some work outs are definitely more enjoyable than others, so way to go on finishing it!

    I really like dr praeger’s veggie burgers! Totally addicted to la tortilla factory tortilla’s too!

    I used to HATE bananas..I can’t even imagine what was wrong with me.

    I haven’t tried a veggie burger. I think I am prejudiced against anything “vegeterian”. I know – something I should get over. Like Julia I have recently tried hummus and love it. More amazing, my super picky 16 yr old and my 8 yr old love it too.

    That looks like one of my go-to dinners! I LOVE Morningstar veggie burgers (I’m not a Boca fan though). My favorites are Spicy Black Bean, Asian Veggie and California Turk’y. Mmmm.

    I used to hate fresh blueberries too, but I can’t get enough now! I actually just did a post about blueberries & my love for them 🙂

    I love the Morningstar Farms black bean burgers – they are the best.

    I can’t think of anything recent – but I went through a phase in high school where I thought I didn’t like peppers and onions…I have no idea why.
