The Easiest Dinner Ever…

Today was crazy. I had a busy work schedule, and I knew I wouldn’t have a lot of time to make dinner, so I decided the crock pot was going to be the answer. This is a dish that my mom has made forever and ever, and I love it. It has so much flavor and it’s SUPER healthy. She always makes it in the oven, but i changed it up a bit and did it in the crock pot. 

Elegant Chicken
Ingredients: 
1/2 cup apricot jam (I used sugar free)
1/2 cup catalina dressing or french dressing (I used fat free)
1 packet Lipton Onion Soup Mix
3-4 Chicken Breasts
(Those are all of the ingredients. Easiest recipe ever…I told you)

 Mix the jam, dressing, and soup packet together.

Place your chicken in crock pot, and pour dressing over the top. You can leave the chicken breasts whole if you’d like. My mom pounds them really thin and then rolls them up all fancy-like. I cut mine into small pieces because I wanted to make sure they were done in time, and I have this weird thing with making sure every ounce of fat and visible vein is removed.  (Side note: I hate raw chicken…blegh…)

Another side note. This was the temp in my car when I got done with my workout this afternoon. 58 degrees in December!?!? Are you kidding me? I LOVE it!!

 Cook your chicken in the crock pot on high for 3-4 hours, or low for 6-8. I served mine with steamed brown rice and a side of steamed whole green beans. Can you say delicious? I can…

 Tell me that isn’t the easiest thing ever?

I had a client today who after our workout was so excited to show me as he put it, “the best thing EVER from the weekend.” I was worried because usually when they are that excited about something, that means they want to tell me about the amazing dessert they made and then finished off in one sitting, but I was wrong. This client of mine has had some severe back and knee issues for most of his life and I have had to be really creative with what his exercises entail due to all his aches and pains. So, he proceeds to get down on all fours on the ground. (We can never do anything kneeling because it hurts him so bad, and he has so many knee issues, so I was like…aghhhhh whaaaa…what are you doing??) He just looks up at me and smiles and proceeds to get back up without the help of anyone, any hand rails, or much pain at all. I couldn’t believe it! After he got up he just looks at me with his eyes welling up with tears a bit and said, “I haven’t been able to do that in 15 or 20 years.” 

I was so excited! We’ve been working with his leg core strength, and he has made milestone improvements since we began. 

That ladies and gents, is one of the MANY reasons why I love my job. 🙂
