Let me start by saying that I don’t even like lemon bars. However, my friend Amanda, does. We wanted to experiment with making some last night, so I searched around for some recipes. I found THIS one on Clean Eats in the Zoo, and we decided to try out our own version. I have to give Amanda all the credit here. I went to the store with her, supplied the playlist while she cooked, and was a taste-tester. To be honest, I didn’t even plan on liking them. Turns out I thought they were pretty dang good.
Delicious Paleo Lemon Pie Bars adapted from Clean eats in the Zoo
CRUST INGREDIENTS:
- 4 cups almond flour
- 1/2 cup tapioca flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup pure maple syrup or honey
- 2 tsp pure vanilla extract
- 1 cup coconut oil, melted
Preheat your oven to 325 degrees. Grease a 9×13 pan with coconut oil or olive oil spray. Combine all crust ingredients in a large bowl, then press into the greased 9×13 pan. Bake in oven for 20 minutes, or until it begins to turn golden brown. While that’s baking, prepare your lemon topping:
LEMON TOPPING INGREDIENTS:
- 4 eggs
- 1/2 -3/4 cup pure maple syrup or honey (Amanda cut this down to 1/2 to decrease the sweetness)
- 1/2 cup lemon juice
- 1 TBSP lemon zest
- 5 TBSP arrowroot starch
Beat together all ingredients. When crust is ready, pour lemon topping (which will be runny) over crust, and bake another 20 minutes, until set. For best results, chill before eating.
Like I said, I really was surprised at how much I liked these. I LOVED the crust. I think that the crust could be an awesome base for a variety of different treats…my mind has already began to wander to experimental mode. Give them a try! You’ll like them I promise 🙂
