My family decided to have a love day celebration for our Sunday dinner. I have mentioned how much I love holidays, and it all stems from my mom. She is a holiday fanatic. We figure, any extra reason to celebrate and have fun should be taken advantage of fully! I wish I would have done a better job of capturing the table settings because they were all pretty darling. We used my great grandma’s pink depression glass, along with all sorts of other red and pink dishes. (I stole these pics from my sis. Thanks Nich!)
I did manage to capture some of the food. Let me just start by saying my mom is always good to have fresh produce on hand. She always has been. She grabbed “what she had on hand” for some roasted veggies and this was what she came up with. Awesome right?
I’d say eight types of fresh produce for roasting is prettty good. This doesn’t include the fresh fruit plate we had and our salad. Well done mom. We wanted our veggies to go along with our love/Valentines theme. So I crafted my sweet potatoes into hearts with a cookie cutter.
I also attempted to shape some carrots into hearts…use your imagination.
Our entire spread was this recipe for the worlds best chicken that we found on Pinterest. It was so delicious. We served it over quinoa. We also had a greek salad with mixed greens, tomatoes, red peppers, olives, cucumbers, and avocado, and a fruit tray.
So tasty. It was definitely a way to make healthy food fun! 🙂 (And cute)
Can I just tell you how hard it is to go home to 30 degree weather after enjoy 75-80 degree temps? Real hard.
